Double Choc Chip Cookies.

How to make them. 

You will need the following:

  • 150g Sugar (I used coconut but any will do)

  • 250g Cashew Butter

  • 80g Spelt Flour (any  flour will do,  althoughI haven't tried with gluten free flour yet)

  • 40g Cocoa Powder

  • 1 tsp Bicarbonate of Soda (Baking Soda)

  • 2 tsp Vanilla

  • Pinch of Salt

  • 40g of Chopped Dark Chocolate or Chocolate Chips

The Method.

  1. Line a baking tray with greaseproof paper and preheat the oven to 180c

  2. Add the sugar and cashew butter to a bowl and mix together, first using a fork and then your hands until mixture comes together. The consistency should be that of a sticky dough

  3. Next add the milk and mix with a spoon until smooth and creamy

  4. Add the flour, cocoa powder, bicarb, salt and vanilla then combine all the ingredients using your hands, until you get a moldable cookie dough

  5. Before shaping the cookies add 40g of chopped dark (vegan) chocolate or chocolate chips to the cookie dough can combine with hands until chocolate is evenly distributed (don’t over mix because the heat of your hands will melt the chocolate) 

  6. Roll into 40g balls and place on the lined baking tray

  7. Flatten out the cookies using your hand and then use the back of a fork to press into to the top of the cookies, first vertically and then horizontally to create a  criss-cross pattern  

  8. Bake the cookies at 180c for 10 to 12 minutes. Allow cookies to fully cool before eating
